    Rustic grandeur and innovation

    Salt is set in a 200-year-old warehouse in Copenhagen's centre. Huge wooden beams dominate the rustic décor. The kitchen uses a trio of salts in its cooking, Læsø, Maldon, and Guerande. Dishes include poached pigeon with smoked chocolate, and fried Danish plaice with cloudberries. It appeals to a fashionable crowd, and businessmen at lunchtime.

    Denmark's finest dining

    Noma is the only Danish restaurant with two Michelin stars. Floorboards, animal hides and candlelight characterise the dining-room in a converted warehouse in Christianshavn. The seven-course tasting menu features fish skin and salt cod, and the muesli dessert is justly famous. The emphasis on Nordic food with a French slant, is popular with Copenhagen's foodies.

    Italian with Michelin star

    Era Ora's unpretentious exterior belies the culinary experience in this Michelin-starred gourmet establishment on Christianshavn island. Fresh pasta, olive oil - and much of the restaurant's chic interior - are imported direct from Italy to this Copenhagen bastion of Italian cuisine. The cellar holds over 1,000 Italian wines.
