    Singaporeans take food very seriously. Seafood hallmarks East Coast Parkway, especially the famed crab at Long Beach. Little India offers good-value restaurants, although fish-head curry fans flock to Tanglin's Samy's Curry.     Iggy's in Orchard is the brainchild of globetrotter Ignatious Chan. Foodies gather here to share space at the counters facing the kitchen.     One of the finest restaurants on Clarke Quay, Coriander Leaf is owned by Pakistani-born chef Samia Ahad.     The huge mirrored wall in Ember, in Chinatown's boutique Hotel 1929, brightens up the small, unfussy interior.     Indian with modern twists

    The contemporary Indian cuisine at The Song of India have made quite an impact on Singapore's restaurant scene.     Set in a nondescript shopping mall dining room, the food at friendly A-Roy Thai in the Colonial District is fresh and flavoursome. The deep-fried tofu with sweet chili sauce packs a real crunch.     Old favourite True Blue Cuisine is set in a restored Peranakan (Chinese Malay) house in the Colonial District. Its cuisine, a spicy fusion of Chinese and Malay, includes ayam buah kelwak, chicken with black nut, and jantong pisong, tangy salad of star fruit and banana flower.     Hawker centres are a major part of Singapore's dining culture. Lau Pa Sat in the Central Business District is the most historic. A Victorian structure with cast-iron ceilings, each stall specialises in different dishes, including Japanese ramen, pig organs, wok-fried seafood, fried carrot cake and South Indian vegetarian.     Value for money tradition

    Indonesian Dutch rijsttafel, meaning "rice table," is a service of many small dishes (up to almost 20) with rice. Busy waitstaff brings all the dishes out and places them in front of you - feast on favorite Indo-Malay wonders like beef rendang, chicken satay, otak otak, and sotong assam (squid) for a very reasonable price.
